Itsus soba noodle salad

Ingredients
- 90 g soba noodles
- 4 tbsp. sesame sauce
- 10 g or 2cm fresh root iner, rated
- 1 hot red Thai chilli, deseeded and chopped
- small handful of coriander, chopped
- 1?4 cucumber, chopped
- 2 spring onions, sliced
- 100 g radishes, sliced
- A pinch of salt
- 1 tbsp. sesame seeds, preferably toasted, to serve
Directions
- tbsp mirin
- tbsp tahini paste
- tbsp soy sauce
- tbsp lemon juice
- tsp sesame oil
- tsp sugar or sugar alternative
- small garlic clove, grated or crushed
- tbsp water To make the sesame sauce:
- Put all the ingredients into a small saucepan and stir well. Bring to the boil and bubble for a couple of minutes, stirring constantly, to reduce and form a thick syrup. (Use the sauce immediately, or store in a screwtop jar in the fridge until needed.)To make the soba noodle salad:
- Cook the soba noodles in one and a half litres of boiling, salted water for seven minutes. Drain and refresh under cold water. Set aside to cool.
- Put the cold noodles into a bowl, add the sesame sauce and all the remaining ingredients, except for the sesame seeds, and mix well.
